E. J. CARR PLANT CENTER Slides Edible Plant Workshop

A warning from Carr to exercise caution concerning the safety of wild plants:

Being an edible wild food gourmet is fun but as with everything else, you learn by doing, but in this the word is “caution” as well as to be conservation conscious, as you gather these delights of woods, field and roadside.

Many workshops were given by Carr and were soon gathered into a cookbook by the self-taught botanist. The novel Weed Patch Cookery, is a delightful romp through the backyard weed patch.

An example is Carr’s weed punch recipe:

WATERCRESS DRINK

Made from the whole plant of watercress. (Nasturtium officinale) 4 lbs. watercress. Chop into 1″ lengths. Bring to boil in water to cover. Simmer for 15 mins. Strain through sieve and press out juice.  Strain through cloth or paper toweling in a sieve, pressing out all liquid. ADD:  1 six-oz. can tomato paste            1/2 cup lemon juice             2 Tblsp. onion juice             2 Tblsp. soy sauce             1/2 tsp salt              Water to make 1 gallon
